I found some frozen chicken parts that I needed to use so I am making home made chicken stock . The house smells wonderful. I am making creamy asparagus linguine with grilled chicken for dinner. Can't wait.

Had to share my brussel sprout dish - cut sprouts into ribbons, add a clove of garlic to a pan with olive oil and cook for 30 seconds. Add brussel sprouts and cook for 4-5 min. Sprinkle 1-2Tbs brown sugar and a dash of sea salt and mix. Top with roasted walnuts or pecans. Delish - and I didn't even like brussel sprouts!

Tracideb, that looks SO FREAKIN GOOD! MMMMMM! We love brussels sprouts!

Tonight I made up a new dish! A thin cornbread: I made half a recipe, but topped it with a pizza/focaccia type topping so now we have corn picaccia! The "spread" was some frozen homemade pecan pesto, then we added on onions, mushrooms and fresh kale from the garden. Topped it with some melty good cheese (not a lot, just a taste) and voila, goodness with some salad from the garden and a beautiful fresh radish and turnip tops soup (again, guess from where?). So yummy, and lots of left overs for tomorrow!!

I know... we can't get enough of them... I think we eat brussels sprouts about 4 days a week - I just place them on a tray, mix with olive oil, salt and pepper and broil them on high heat... there's nothing better tasting on this earth.

I never follow recipes, just cook whatever strikes my fancy.  Over the weekend I took a pound of Italian sausages, took them out of their casings and made 4 large meatballs out of it (with eggs and a tiny bit of flour).  Then I made a puree/sauce out of tomatoes, onions, yellow squash, pepperoni and olive oil; and cooked the meatballs in the puree/sauce for about half an hour-45 minutes.  It was so delicious!

I'm making a big pot of potato leek soup. I had a quart of homemade chicken stock left and used it and it is simmering away on the stove and smells great. I am trying a new chocolate chunk recipe next.

I'm making pulled bbq pork in the slow cooker today. Very easy and tastes great.

Creative leftovers night:  chicken pot pie made with leftover roast chicken, with a risotto crust.  Not as bad as it sounds!

Had no idea what to cook last night, so while poking around the pantry, I found some stone ground grits I was sure had been tossed out.  Made a tasty shrimp and grits.  Grits had ricotta and parmesean cheese, shrimp were sauteed with onions, garlic, butter, fresh parsley, and a bit of lemon juice.  Pretty tasty meal for one whipped up on a whim.

We love brussel sprouts as well and eat them at least once a week. I usually cut them in half and mix them up with broccoli, cauliflower, fresh garlic, sea salt, and olive oil.  Then I roast them on a pan in the oven, my mom's recipe  |:)|

I bought a jar of molasses as an impulse buy a while back and have been trying to decide what to do with it. Well today I am baking a molasses cake. Its in the oven perfuming the house and I'll get to try it for desert with whipped cream tonight.
