When I have time, I cannot wait to read all of these mac n cheese recipes! But I tried a very simple one the other day that was very very good. Here it is:

Here is the simple and yummy mac-n-cheese from the other day:

1 package elbows (16 oz)
1/2 cup butter
2 tsp mustard (i used creole)
1.5 tsp salt (or seasoned salt) - i sprinkled Lowry's
5 cups of milk
4 cups (1lb) shredded sharp cheddar

-----------
Cook pasta according to package directions
preheat oven to 375
in large saucepan, over med. heat melt butter
stir in flour, mustard, and salt
gradually stir in milk
cook and stir until mixture thickens and bubbles
remove from heat
add 2 cups cheese, stir 'till melted
in large bowl combine sauce and pasta
spoon inot backing dish
top with remaining 2 cups cheese (and I put crumbled Ritz, because it's always better with Ritz)
(actually I did not do the cheese on top either)
Bake 40 minutes or until hot and bubbly
Let stand 10 minutes

My husband has requested I make mac and cheese tomorrow. ATank, does this recipe really use 5 cups of milk?
Anybody else want to share a recipe? Please include amounts and not just ingredients. Thank you.

I've never used a recipe EVER. But I've never made mac n' cheese without mustard and tons of different cheeses.... a key for me is always some parmesan/reggiano to keep it tangy.

I don't mind going rogue on the cheese or adding spices, but I don't cook it enough to guess at the milk/flour/pasta ratio. I bake. I like measurements.

I ended up using Debbie's recipe, only I increased it, used cheddar and havarti and put toasted bread crumbs on the top. It was pretty good and I get to have leftovers at work tonight. Thanks, all.

In any family snack, you could never go wrong with Mac and Cheese.  Everyone just loves them, except those of course with conditions that would not allow them to savor this type of meal.  But in any case and any instance, a good mac and cheese would keep everyone filled to their heart's content.

So what type of cheese do you suggest for this? I have always used orange cheddar and would be interested in trying other alternatives.

Always! I use a mix of X-Sharp Cheddar, some Parmesan, American (for creaminess) and whatever else is in the fridge.

I have a Flying biscuit recipe that uses cheddar, goat cheese, parm, and asiago.  It's my go-to mac and cheese recipe.

Yes.  Please share.
3 - cups grits
8 - cups chicken stock (can sub water, but I never have)
1 - stick butter
2 - cups cream
2 - teaspoons salt

Place all ingredients in crock pot on low, let cook over night.  In AM, stir thoroughly and add 1 package cream cheese.  Before serving stir in 2-3 cups grated cheddar.

This is a full crock pot recipe (I have old school ceramic, non-removeable pot).
