This time around, I'm flying down by myself, but when I go back in April I think Eric is going to go with me for a mini vacation. I would love to go to Busch Gardens that visit.

Longboat Key, which is drivable, is also pretty nice.

We're getting married on Longboat Key in April.

Not sure if you're a beer drinker, WhitNerd, but Cigar City has a tasting room in Tampa that I hear is pretty cool, and their beers are outstanding (and not available here besides their 2 flagship mainstream brews):

Outside of that, I'd try to get some beach time in St. Petersburg - it's very close. I love Tampa.
St. Pete is pretty awesome....here are some great places in St. Pete!

if you take dogs, the best dog beach I've ever visited is near St. Pete
http://www.fortdesoto.com/pawplayground.php which has a fenced in grassy area, as well  as open beach and dunes for the pups!

The Emerald Bar is cool/divey:

BEAK's has amazing brunch in a trippy kitchsy arty spot:

and the Undertow is the best beach bar/grub

My sister lives in Seminole...we get down that way quite a bit.  If you get a chance to splurge on dinner one night head to Salt Rock Grill in Indian Shores and sit out on the deck.  Really nice....
